Echizen - Fukui
Echizen is renowned as the birthplace of "Echizen Forged Blades," recognized as Japan's oldest cutlery production region. With a history spanning over 700 years, its origins trace back to the Kamakura period, when blacksmiths began crafting agricultural tools and blades. The traditional handcrafted techniques of Echizen are highly valued, earning nationwide recognition for producing high-quality knives. Its specialties include traditional Japanese knives such as Deba (filleting knives) and Nakiri (vegetable knives). In recent years, the region has also focused on the production of stainless steel knives to meet modern demands.
